Toasted Cheese, Tomato and Basil Sandwich

Ingredients:

2 Slices of Bread (I used white here, but wholemeal would be excellent too)

Cheese (Cheddar, sliced or grated, you choose, or you can use Mozarella for a milder flavour)

Sliced tomato (enough to cover one side of the sandwich)

Basil (enough to cover the tomato)

Butter


Method: (UK/USA)

Heat up the grill/broiler.

Toast the bread slightly, and then butter and place on a grill/broiler pan.





On one slice of bread, spread the cheese. On the other slice of bread, spread the tomato.







Place under under the grill/broiler until cheese starts to melt.


Remove from heat and cover the tomatoes with basil and then turn the slice of bread with melted cheese over the tomato and basil slice to form a sandwich.








Put back under grill/broiler, till one side browns, then turn over to brown the other side.


When second side is brown, remove from grill/broiler, place on a plate and cut in half.




Serving Idea: Garnish with baby plum tomatoes, rocket leaves and crisps/potato chips.
